I miss my daughter

snickerdoodles


My 18 year old is off at Humboldt State and requested cookies from home for her 18th birthday. So this morning I made a batch and here is the recipe I have developed.
1/2 c shortening
1/2 c butter
1 1/2 c sugar
2 eggs
1 2/3c flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt

roll walnut sized balls of dough in cinnamon sugar then bake in a 375 degree oven for no more 9 minutes.

OK yikes this old fashioned recipe could probably use a healthy make over but I will just not eat any and hope my daughter shares these with many people I mean who uses shortening and butter besides Paula Dean?

slow is the new FAST


long run done and I feel great
I have decided to take back my goal time and go with what worked for me during my Los Angeles Marathon training.
so my new motto is enjoy the process! slow is the new fast!
with that said today I just ran to Hermosa Pier and home 8.24 miles in 1:30 not bad going slow and steady!

free day for food is my treat on long run day!! I get to eat whatever I want all day as a reward to myself for doing the long run
today I really want .....hmmm sushi? yeah that's right I am going to Sushi Gone Wild and grabbing some now!

many people my dear husband is one of them, believe that running is not a sustainable form of exercise.....limiting belief here these people think it is just a matter of time until you get knee/hip/ankle/back pain. I am out to prove these people wrong and that is why I run relatively slow~ I want to be that 90 year old lady at the Los Angeles Marathon in the year 2050!!

Lebanese pizzas





Lahme bajeen
Lebanese pizzas

ground beef
wheat tortillas
brown onion
fresh tomato
Jalapeño pepper
salt/pepper

add meat/onion/peppers/tomato and seasoning to food processor pulse to dice the veg and just to combine the mixture
then heat the oven to 500 degrees
on a cookie sheet spray pam lay out tortillas and spread with eat mixture~ I use my hands
then bake in very hot oven until meat cooks and tortillas gets crispy
serve with
yogurt mixed with sliced cucumbers salt and dried mint for dipping

missing Lebanon



I was missing Lebanon lately. I am married to a Lebanese Christian who fled Lebanon in 1979 during the never ending civil war between the Christians and the Muslims. We met in college he was getting his Masters at Case Western University and I was getting my RN training at St Vincent Charity back in 1984. It was love at first sight for me. He had the foreign sexy look. When we decided to get married we picked Lebanon because none of his extended family could come to the States and so we got married in the mountains over looking Beirut. I fell in love with the country it is beautiful. And we have made several trips back to enjoy the beaches, night life, extended family and the food. I miss Lebanon and all her beauty especially today.
The food of Lebanon is amazing. I learned how to make many dishes so when I do I will blog my version of the dish and take a picture of it so that someday I can gather up all my blogs and share them with my children so they can make my recipes.
This is a favorite of my son Anthony and I made it today at his request. I love cooking dinner and love it even more when a member of the family requests it!

Peas and Carrots stew with rice
1 large yellow onion
4 cloves of garlic
1 pound fresh carrots
1 bag frozen baby peas
1 small can tomato paste
1 pound of beef stewing chunks
1 bunch of cilantro (optional)
olive oil
seasonings: salt, pepper and (lebanese sweet pepper)
also make a pot of steamed rice to serve with the stew.

dice onion saute in 1 tsp olive oil (I use a pressure cooker)
then add the meat and the seasonings and brown in small batches (do not crowd the pot or the meat will not brown)
while the meat is searing peel and cut carrots into small coins
then add tomato paste to pot to deglaze the pot (scrape up all the brown bits into the sauce) and add the carrots to the pot.
add a quart of water and stir then place the pressure cooker top on and get up to pressure and cook for 40 minutes
make a pot of rice

when the 40 minutes is up cool down the pressure cooker under cool running water, then open it and add the entire bag of frozen baby green peas and 4 cloves of garlic pressed through a garlic press.

serve with steamed rice and top with cilantro as desired

I knew that a cross country team was having a race that went through my house: in the back door through the living room and out the front door and concluded down the hill at the beach, but I locked the door because my house was messy and so much crap was in my house I had covered it like a mountain in my living room with a carpet. Then Bill Phillips came to the door and said why did you lock the door open it and let the teams race through. I was mortified but I did. Then he and a few others stayed and talked to me for a while about I don't remember what we talked about....OK weird dream. But thinking about it now. Kind of symbolic most likely to do with consealments. and truth Truth is my abyss~crossing into a place of calmness and self love.I work on this and am ever mindful of what my truth is.




61 days to my goal of a 2:30 Half Marathon. I am going to do this!!!

my life and health
my awareness of all that is important in life


today I broke free from my breakfast rut with a meal replacement bar instead of toast/peanut butter

I have not had a drink in 7 days! I need to remember to save alcohol for celebrations and vacations not an everyday thing that is just a lazy uninspired habit. I will be mindful of food choices all day. small simple often and loads of water!


packing and out of Los Angeles for 8 days going to Eureka, Ca and then Mammoth Mountain to run on trails/kayak in lakes and relax at the music festival in the fresh mountain air.

focus on what works

I did a 6 mile run in 1 hour in the cool beach breezes!
My post running brain is peaceful and happy!
today I will be mindful on my food choices and my thoughts.
I will focus on what works, let go of what others think and reach out to be love in the world!
going to Eureka on Tuesday to drop my oldest daughter at Humboldt~thank God she is in the dorm~then drive over to Lake Tahoe and Mammoth to run in the fresh mountain air and relax.~7 days of travel to renew and refresh!

my arms are quivering but I feel strong because I went into the gym with this plan and I

food simple and stop before I am 60% full small portions are key here with each bite being truly nutritious ~I am zeroing in on what works!

liquid is water coffee or tea all homemade fresh and plain or protein shakes

man-down-support needed!

my brother Trailboy http://hitthetrails.wordpress.com/2010/08/09/deep-denial/ is training with the intention of BOSTON this year! Unfortunately his new training plan injured him a bit and he is sidelined for a minute. I hope that he gets back on track in no time and qualifies for Boston this year. Please offer him any support if you can.

I am training with the intention of 2:30 Half on 10/17/10 in Long Beach

with that goal in the front of my brain I ran fast today but my Garmin was a big fail again it would not turn on...dang.
well I ran hard for 6 miles! I love the XC teams and the power and energy they give as they blast by me like I am standing still!! I love the sun it was out for 2 days now ...OH my God is summer finally here?

I am going to Mammoth to run at elevation and breathe the light fresh mountain air! life is good

another annoying device!




Dear Scale,


You make me happy one day only to dash me into depression the next. Why are you so such a liar? Why do you torture me so?


I suppose I just don't understand yet that you give the honest truth in the moment but at the same time don't provide an honest assessment. Am I retaining a little extra water today? Did I perhaps lose a pound of fat and gain a pound of muscle? Am I weighing myself 4 times a day after meal and water consumption and then stressing about putting on weight? You really only tell me what my body weighs don't you? You don't tell me anything about what that weight is comprised of. You're so not nice.


I'm going to make a deal with you dear Scale. From this day forward I'm only going to visit you once a month and only first thing in the morning upon arising; prior to any food or liquid consumption. When my clothes are fitting more loosely but yet you're telling me there's no change ... well that's just a contradiction now isn't it?


No more dear Scale ... to the darkest corner of the closet you go until one month from today. I'm free at last ...


If you don't take control of your relationship with this device it will continue to control you and your emotions.

I am a minimalist at heart and after ipod died on me today and my Garmin was not charged and failed last week I want to improve my time but all the technology required to track it. I am wondering if it is all taking the joy out of the process.
